Air-Fryer Roast Chicken
Ingredients
1.2 kg whole chicken (or chicken pieces)
2 stalks of lemongrass
2 thumb-sized pieces of kunyit (fresh tumeric)
2 thumb-sized pieces of lengkuas (fresh galangal)
3 to 4 cloves of garlic
1 to 2 kaffir lime leaves (remove the thick centre vein)
1 to 2 pandan leaves
1.5 Tablespoon oyster sauce
1.5 Tablespoon light soy sauce
1 teaspoon sugar
1 teaspoon rice wine (optional)
A little salt to rub the inside cavity of the chicken
Method
wash and dry your chicken
rub a little salt into the cavity of your chicken
pound all the fresh ingredients in a mortar and pestle
mix in the sauces
pour the marinade onto the chicken and rub onto the skin as well as the cavity
let it marinade for few hours
roast your chicken at 180C in your air-fryer oven until golden and juicy (check regularly to make sure it is not undercooked or overcooked)
